Red Fish, Blue Fish

This winter, Chef Daniel Miletic is returning to the food that shaped some of his favourite years in professional kitchens — seafood.

For one month only, Midtown Bar & Dining will host RED FISH, BLUE FISH, a limited-edition dinner menu built around the kind of dishes Chef Daniel Miletic has always loved to cook and eat. Inspired by years spent working with premium seafood, coastal flavours and ingredient-led cooking, the menu brings together some of his personal favourites in a way that feels relaxed, generous and unmistakably Midtown.

Designed for cool nights in Fish Lane, the experience leans into warm lighting, intimate tables, good wine and seafood dishes made to linger over.

The $89pp menu features freshly sliced salmon sashimi dressed with soy, ginger and sesame, soft shell crab charcoal bao buns, a rich Provençal-style fish stew layered with saffron and local seafood, baked Goldband snapper with lemon tahini and dukkah, and Midtown’s deep-fried ice cream to finish.

Available Wednesday to Saturday throughout July.

Salmon Sashimi (GF)
Freshly sliced Atlantic salmon dressed with soy, ginger, garlic and sesame dressing, topped with radish and purple shiso.

Soft Shell Crab Charcoal Bao Bun (DF)
Steamed charcoal bao bun filled with lightly battered soft shell crab, coriander and sriracha slaw.

Provençal Fish Stew (GF)
Local prawns, flaky Red Emperor, Spring Bay mussels, tomato, saffron and dry vermouth.

Baked Goldband Snapper (GF)(DF)
Served with steamed greens, lemon tahini and dukkah spice.

Deep-Fried Ice Cream
Coconut-crumbed vanilla ice cream, fried and served with dulce de leche.


Available throughout July at Midtown Bar and Dining in Fish Lane, South Brisbane.
